Purple Gaze — Spyglass + AKB at Archer Hotel New York 12 Months of Cocktails: June
The inspiration A spirit of empowerment
For the June entry of Archer’s 12 Months of Cocktails, Nicole Mendoza, bar supervisor at Spyglass Rooftop Bar, created the Purple Gaze cocktail with Pride Month in mind.
What started in 1970 as the Pride March in recognition of the 1969 events at the Stonewall Inn in Manhattan’s Greenwich Village has evolved into a month-long celebration of gay pride the world over. Every June, New York City is awash in rainbow pride flags — with the color violet representing “spirit” and, on its own, representing “pride.”

As lovely as the sunset view from Spyglass, the Purple Gaze features Empress 1908 gin — a gorgeous spirit that gets its violet color from a blend of black tea and butterfly pea blossoms. The cocktail also includes freshly squeezed lemon juice, simple syrup, ginger syrup, club soda and another pour of Empress 1908. This beautiful drink is garnished with a rainbow sour belt.

PURPLE GAZE
1 ounce and 1/2 ounce Empress 1908 gin, divided
1/2 ounce freshly squeezed lemon juice
1/2 ounce simple syrup
1/2 ounce ginger syrup
Club soda
Rainbow sour belt
To a Collins glass, add 1 ounce gin, lemon juice, simple syrup and ginger syrup. Fill with ice and top with club soda. Pour remaining 1/2 ounce gin atop as a floater. Garnish with a rainbow sour belt.
