Roasted Sweet Potatoes A Holiday Recipe From Chef Mario

4 cups sweet potatoes, peeled and medium-diced
½ cup sweet onion, small-diced
1 garlic clove, minced
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 pinch salt and pepper
1 tablespoon parsley, chopped
- Heat the oven to 425˚.
- To a bowl, add sweet potato, onions, garlic and olive oil; toss to coat.
- Transfer mixture to a roasting pan and place in the oven; stir frequently until vegetables are soft and golden brown, about 30 minutes.
- Drizzle with balsamic vinegar.
- Season with salt and pepper.
- Garnish with parsley.
