It’s a toast heard around the world. Whether raising a glass of water or wine, a mocktail or a cocktail, the focus is on health, wellness and choices.

Increasingly, that focus is carrying over to bars and eateries. Dry January is growing exponentially. What used to be simple, juice-based drinks without alcohol — Shirley Temple, anyone? — are now layered, herb-infused and well-mixed (and well-garnished) cocktails that are made and served just like their alcohol-including versions. And bartenders are creating beautiful, inventive nonalcoholic recipes that taste as good as they look.

FUN FACT: The first reference to zero-proof cocktails dates to 1862 in Jerry Thomas’ “The Bartender’s Guide,” which includes a section for “temperance drinks.”

Try these zero-proof cocktails through the end of 2024:

Garden of Life — A simply executed, beautiful zero-proof beverage with Seedlip Garden 108, lime juice, ginger syrup and grapefruit soda, garnished with cucumber, orange, grapefruit and arugula. Available exclusively at AKB in Archer Hotel Austin.

Mango Tango — A tropical dessert as much as a zero-proof cocktail, with rum or vodka substitute, lemon, strawberries, NA beer and two scoops (yes!) of mango sorbet. Available exclusively at AKB in Archer Hotel Burlington.

Fool’s Gold — Served in a rocks glass, this beauty features Seedlip Spice 94, mango, cranberry, mint simple syrup and lemon juice. Available exclusively at Sky & Vine Rooftop Bar at Archer Hotel Napa.

Pineapple Express — Pucker up with this tropical treat served in a coupe glass, complete with an edible flower. Orgeat syrup tempers the pineapple and lime juice. Available exclusively at AKB in Archer Hotel Redmond.

What the Foxx — Muddled jalapeño and a Tajín-enhanced rim deliver a kick to this grapefruit and lime zero-proof. Honey syrup brings it down a notch. Available exclusively at AKB in Archer Hotel Redmond.

Cool as a Cucumber — A champagne flute looks lovely with a cucumber garnishing the lime, ginger beer, honey simple syrup and soda water beverage. Available exclusively at AKB in Archer Hotel Redmond.

Simple Thyme — Muddle blueberries and add thyme simple syrup, lemon juice and elderflower tonic, and this zero-proof drink is simply sublime. Available exclusively at AKB in Archer Hotel Tysons.
